Update sourcemap generator command in VSCode settings

- Changed the `luau-lsp.sourcemap.generatorCommand` from using `default.project.json` to `plugin.project.json` to align with the updated project structure.

This change ensures that the sourcemap generation process is correctly configured for the current project setup.
