refactor: optimize file watching and sourcemap generation
- Enhanced performance by replacing kqueue with FSEvents on macOS and implementing a lazy watch setup. - Introduced platform-specific file watchers for improved event handling on macOS, Linux, and Windows. - Updated sourcemap generation to use a oneshot session for non-watch scenarios. - Cleaned up the ServeSession's init_tree function by removing the path_roots return value, streamlining the codebase.
